Penny Pinching Pantry Raid - Day 3, 4 & 5

Alright. So we hit the weekend and I may have had one of the best 4th of July's to date. I spent a lot of time outdoors swimming, hiking, running and just being with the family. I lucked out money wise -- we were with family so much that we didn't have to spend that much or use the food we had.


Day 3 - Friday, July 3
Breakfasts: Eggs in whole wheat bread. I added spinach, red pepper flakes and fresh herbs to mine, along with ketchup.
Lunch:
Me: Leftover Spinach & Bacon Salad in a whole wheat tortilla wrap. Side of strawberries with agave and ground cinnamon

Hub: Provolone and Salami sandwich on white bread, apple
Dinner: Pizza night with family


Day 4: Saturday, July 4
Breakfast: pre-race HIRO energy drinks, free food from Freedom Run sponsor booths (wheat bread, grapes and Gatorade). Then we ate real a real breakfast consisting on eggs, veggies and potatoes.
Lunch: Can't remember. But we did make a couple sorbets. I used our lemons and leftover butte
rmilk to make Lemon Buttermilk Sorbet from The Perfect Scoop cookbook. I also used some cantelope leftover from a work function to make Cantelope Sorbet. Both were really good. However, the cantelope was really cantelopy. Just saying.
Note: I also saved some money with my food assignment by making a pinto bean dip from my Williams-Sonoma Hors d'oeuvres
Cookbook! I used the dried beans and other ingredients I had on hand. I also made my own tortilla chips with the loads of white tortillas that I knew I would never eat on their own. I can't wait to post this for you!
Dinner: BBQ with family--we brought hot dogs and hot dog buns, corn chips, pinto bean dip and homemade tortilla chips. I had debated on whether to count this but I think I'm going to just to challenge myself even more. (We'll see how I feel about it by the end of the month!)

Day 5: Sunday, July 5
Breakfast: No Breakfast
Dinner: leftover pinto bean dip and homemade torilla chips, hot dogs, broccoli and pasta salad with parm cheese. strawberries and blueberries with agave and ground cinnamon. HIRO energy drink.
Dessert: Tribute to Katherine Hepburn Brownies (for Tuesdays with Dorie) and Lemon Buttermilk Sorbet

I have to tell you guys this challenge is making me feel really good! I was really nervous that I would feel so limited. I was nervous that I'd really have to put some of my baking and creative cooking on hold... but I haven't. I even feel like I am expanding my skills as a cook. I think I am learning to substitute some foods better and use what I have. Anyway, be sure to check out the other foodie peeps that are pinching their pennies.

Money Spent: $10.57
-bought turkey dogs, whole wheat hot dog buns, corn tortilla chips for family bbq food assignment

You are doing awesome! We didn't have to spend any money this weekend because we were at our friends house and they provided all of the food for the bbq, etc. This week I am trying to come up with meals using our pantry, freezer, fridge. It is actually fun!

You are doing great! I too am having fun with this challenge - it's amazing what we have that we never use!
Now we know, and we're almost 25% finished!
